Must have:
- Minimum grade 12 education Completed apprenticeship program or food technology diploma
- 4-6 years experience in full-service hotel or restaurant
- 3-4 years experience at the Sous Chef level in a comparable environment hotel/In suite dining
- Must possess excellent training and motivational skills.
- Sound knowledge of all food preparation
- Solid understanding in all cost control areas. Labor & Food Cost.
- Base understanding of Inventory control programs.
- Solid understanding of Health and Safety issues and procedures
- Flexibility to work day, evening, weekend, and holidays.
- Work locations include kitchens at both Woodbine and Mohawk racetracks.
Some of what you’ll do
- Maintains and supervises quality standards of all food preparation by cooks and all other kitchen employees under his / her supervision.
- Ensure that highest standard of food is produced always based on standard recipes and their presentation.
- Maintain portion control based on standard recipes and the utilization of all items.
- Keeps a running check on the progress of all preparation based on approved systems prior to the service period to assure punctual delivery of our in-suite dinning and casino food program.
- Trains all kitchen staff with proper instruction on preparation of food and operation of kitchen equipment as set by company standards.
- Report to the Head of Culinary all special occurrences that may be detrimental to the operation of the kitchen.
- Is in tune and communicates with Casino partner about guest experience and occupancy levels on a daily and weekly basis.
- Continually keep abreast of changing trends in the food industry and hotel in suits dinning.
- Update and maintain daily payroll on Kronos system and produce labour reports which are to be submitted to the Head of Culinary.
- Ensure quality of standard recipes are maintained and monitor menu items performances for future changes
- Participate in planning of new menus, producing of recipes and their implementation on a timely manner.
- Other related duties as assigned.
